山の上の三ツ星レストランと呼ばれるFocons de sel フロコン・ド・セル。 
このレストランはムジェーブというモンブランの麓に位置しているスキーなどで有名なリゾート地だ。

シェフであるEmmanuel renaut エマニュエル・ルノーはクリヨンでクリスチャン・コンスタンや、イヴ・チュエリエスに師事した人物で、マルク・ヴェイラのセカンドとして働いていた経歴を持つ。

2004年にはＭＯＦ(国家最優秀職人賞)を獲得、2012年には三ツ星を獲得した。
さらには2012年のその年のシェフCuisinier de l’année 2012にも選ばれるなど勢いは留まらない。 

この賞の受賞者はジャン=フランソワ・ピエージュ(2011)、ジル・グージョン(2010)、エリック・フレション(2009)、ヤニック・アレノ(2008)、アンヌ=ソフィ・ピック(2007)という顔ぶれだ。

この書籍は5つの章に分かれており、 湖とオーヴィヴ 、 牧草地と岩 、 菜園と果樹園 、 森 、 高山 となっている。

自然の恵みをふんだんに使った彼の料理約50点が掲載されており、そのどれもが洗練されているが命の力強さを感じられるものばかり。 CUISINE BRUT 100% MONTAGNE とあるが、正にその通りの料理だ。
